Ingredients:
1/2 cup Granulated brown sugar (100 g)
9 Tbs unsalted sweet cream butter softened (120 g) + 2 Tbs to cook the apples (30 g)
2 cups walnuts crushed into bits and pieces in the mixer (200 g))
1/2 cup all purpose flour (70 g)
3 large eggs
5 medium size apples (Granny Smith, Gala or any apple that can be baked)
5 Tbs Cognac
1 tsp vanilla extract
1 pinch of salt
Confectioners' sugar for the decoration
Directions:
Preheat oven to 350 degrees F - 180 degrees Celsius or Therm 6,
Crush into bits and pieces the walnuts in a mixer, keep a few halves walnuts aside for decoration,
With the Kitchen Aid whip on, beat the softened butter (9 Tbs) and the granulated brown sugar,
Add the 2 cups of bits and pieces walnuts; add the eggs one by one, flour, salt and 5 Tbs Cognac.
Mix well on medium speed,
Butter a round pie plate (10"), pour the mixture over, and place in the oven for 35 minutes,
While baking the cake, peel and core the apples. Dice into ½ inch cubes,
Melt the 2 tbs butter in a pan and brown the diced apples for 15 mn, mixing from time to time and adding vanilla extract after 10 mn
cooking,
When the cake is done, let it cool for 3 mn before carefully placing it onto a large plate,
Wait until it's completely cool before painstakingly cutting the cake crosswise into 2 equal parts.
Use a large well sharpened knife (this is the most delicate part of this recipe),
Spread the bottom half part of the cake with the cooked apples and replace the second half on top,
Sprinkle some confectioners' sugar over the top and arrange some walnut halves for decoration around the cake,
Serve with whipped cream,
