Ingredients:
8 apples (Granny for example)
1 lb challah bread (also called brioche)
4 eggs
1/2 cup of crème fraîche (or heavy cream)
1/2 cup sugar
4 Tablespoons or 1/4 cup butter
3 Tablespoons Calvados or Cognac
Directions:
Peel and cut apples into small cubes. Place apples in a saucepan over medium heat with butter for
10 minutes. Sprinkle with half of the sugar and allow caramelizing for 10 more minutes. Add the
Calvados or Cognac near the end of the cooking time.
In a large mixing bowl, beat the eggs and the remainder of the sugar with a fork. Add the crème fraîche.
After breaking the "brioche" into small pieces, add it to the bowl with the apples. Mix together.
Preheat oven to 375 degrees Farenheit (190 Celsius). Butter a cake dish and pour in the mixture. Place
the cake dish into a larger dish with 1 an 1/2 inch of water to make a double boiler effect. Bake for 50
minutes.
Allow to cool before removing from mold.
