    Gateau Breton with Jam

    Servings: 6
    Preparation and cooking time: 55 minutes

    Ingredients:

  • 16 Tablespoons of melted butter (2 sticks or 8 oz)
  • 1 cup sugar
  • 6 egg yolks + 1 for the decoration
  • 1 1/2 cups sifted flour
  • 2 Tablespoons of jam (apricot or orange)
  • Directions:

    Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).

    Mix the sugar with the 6 eggs yolks for 2 minutes. Add the melted butter and then the sifted flour.

    Allow to rest for 10 to 15 minutes.

    Pour 1/2 the mixture into a greased, round cake pan.

    Spread the jam on the dough at the center of the cake. It should spread a little but do not let spread up to the edge of the cake.

    Pour the remainder of the dough onto the jam and spread evenly. This step is sometimes difficult to do.

    Brush the top of the cake with the last egg yolk and then use a fork to give a striated effect.

    Place in the oven for 15 minutes then reduce the temperature to 300 degrees Fahrenheit for 30 minutes.

    Serve with the "crème des Princes".
