    Rhubarb Tart

    Servings: 8
    Preparation and cooking time: 60 minutes

    Ingredients:

  • 1 round flaked pastry shell
  • 2 pounds rhubarb (900 grams)
  • 1 cup whipping cream (crème fraiche if available)
  • 2 Golden apples
  • 3 eggs
  • 2 oz slivered almonds (60 grams)
  • 1/4 cup sugar (120 grams) and 1 Tablespoon to spread on tart
  • Directions:

    Heat oven to 375 degrees Fahrenheit. (200 degrees Celsius).

    Wash and peel the rhubarb. Cut up in small cubes and cook for 10 minutes in saucepan with 1/8 cup of the sugar. Remove the water obtained at the beginning of cooking. Lower the heat after the first 5 minutes of cooking.

    Roll out the dough in a buttered tart pan. Peel the apples and cut into thin slices. Place half the apple slices onto the dough. Pour the rhubarb onto the apples and then place the remainder of the apple slices on top. Apples will remove the bitter taste of the rhubarb.

    In a bowl, mix the eggs, the remainder of the sugar (1/8 cup) and the cream together. Pour the mixture onto the apple/rhubarb. Spread the slivered almonds evenly on top.

    Place the tart in the heated oven for 45 minutes.

    5 minutes before the end of the cooking time, spread 1 Tablespoon of sugar onto the tart.
