    Salmon Crumble

    Servings: 4
    Preparation and cooking time: 45 minutes

    Ingredients:

  • 2 lb filet of fresh salmon
  • 1/4 lb. (100 g) smoked salmon
  • 1 cup cream (light if you wish)
  • 2 onions
  • 2 leeks, save the white parts only
  • 1 cup of Burgundy white wine (Chardonnay)
  • 1 Tablespoon of olive oil
  • 1 Tablespoon balsamic wine vinegar
  • 1 Tablespoon chopped fresh dill
  • 1 Tablespoon chopped parsley or thyme
  • 4 Tablespoons of breadcrumbs
  • 2 oz grated parmesan
  • Directions:

    In a frying pan, heat the olive oil and sauté the chopped onions and leeks cut into 1/2 inch pieces for 5 minutes.

    Add the white wine and continue to cook, stirring occasionally for 10 minutes or until the wine has evaporated.

    Preheat the oven to 350 degrees F - 180 degrees Celsius or Therm 6.

    During this time, cut the fresh and smoked salmon into small pieces.

    Spread the vinegar into a 9 inch round oven proof gratin dish.

    In a bowl, mix the cream with the dill, parsley, salt and pepper.

    Pour the onion and leek mixture into the gratin dish. Sprinkle the fresh and smoked salmon evenly over the mixture.

    Pour the cream on top to cover the salmon.

    Sprinkle the grated parmesan and then the bread crumbs.

    Place in the 350 degree oven for 30 minutes.

    Serve with rice.
