    Prune Plum Clafoutis

    Ingredients

  • Eggs 4
  • Flour 2 cups
  • Sugar 3/4 cup (6 oz)
  • Milk 1 cup
  • 1 lb of fresh Prune Plums
  • Optionally: 3-4 large spoons of Cognac
  • Directions

    Buy fresh red prunes if possible.
    Rince the red prunes.
    Cut each of them into 4 pieces and put them into a bowl.
    Optionally, add 3-4 large spoons of Cognac and let them rest for a few hours mixing them from time to time.
    Heat oven to 350 degrees F.
    In a large bowl, mix flour, sugar, eggs and then add the milk slowly.
    Beat with electric mixer until there are no more lumps.
    Spread the cut prune plums into 9" greased cake pan and spread 3 additional Tbs of sugar.
    Add the remaining juice/Cognac to the batter if you have added some Cognac. Pour the batter into the cake pan slowly (on top of prune plums).
    Bake for 50 minutes at 350 degrees F.
    Serve warm if possible.
