    Plum Tart with Confectioner’s Custard

    Servings: 8
    Preparation and cooking time: 60 minutes

    Ingredients:

    For the filling and the confectioner’s custard:

  • 1 1/2 pounds of plums
  • 2 cups of milk
  • 1/3 cup of sugar
  • 1 heaping Tablespoon of flour
  • 2 egg yolks
  • 1 Tablespoon of Cognac


  • For the pie crust:

  • 1 1/2 cups of flour
  • 1/3 cup sugar
  • 1 egg
  • 8 Tablespoon of butter (1 stick)




  • Directions:

    Preheat oven to 375 degrees Fahrenheit.

    To prepare the pie crust: (you can buy a premade frozen one if you are pressed for time). Melt the butter in the microwave or in a double boiler. Put the flour in a large bowl, adding the sugar, egg and melted butter. Mix well. Add 1 to 2 tablespoons of water so the dough sticks together and can be rolled out easily.

    Roll out the dough and place in a buttered 10-11 inch pie plate. Place in 375 degree preheated oven. (without filling). Cook for 15 minutes or until golden.

    For the confectioner's custard: Boil the milk on medium heat. In a bowl, mix the egg yolks with the sugar and Cognac. Then add the flour. Pour the boiling milk into the mixture. Mix well. Place the mixture back into the saucepan and continue heating on medium while mixing for a few minutes.

    Once the pie crust is cooked and cooled, pour the lukewarm confectioner's custard in. Having cut the plums in half and taken out the pit, place them face side up onto the custard filling. Sprinkle 1 Tablespoon of sugar onto the plums.

    Place in the oven, heated to 400 degrees for 45 minutes.

    Serve cold. Bon appétit !
