    Soufflé Opera

    Ingredients
  • 6 eggs
  • 2 lemons (organic if possible)
  • 1/4 cup (2 oz) of sugar
  • unflavored gelatine to gel 4 cups of liquid
  • 1 can of pineapple slices with juice (Net wt.20 oz.)
  • 2/3 of a cup of heavy whipping cream
  • Directions:

    Separate eggs yolks from whites.
    In a mid-size bowl, beat egg yolks, grated zest of the lemons and sugar.
    Warm the bowl by floating it in a larger receptacle filled with warm water (don't get any water in the bowl) and beat until the volume of the egg and sugar mixture doubles (about 3 minutes with a fork).
    Dice 6 pineapple slices.
    Add them to the mid-size bowl along with 2 tablespoons of lemon juice.
    Mix in the gelatine and let the mix rest for two hours in the fridge.
    Add the whipping cream to the mix.
    In a separate large bowl, whip up egg whites until they are stiff.
    . Using a tablespoon, mix them with the other ingredients in mid size bowl VERY delicately.>
    Put the mix into individual ramequins and put them in the fridge for 5 to 6 hours.
    Decorate with the rest of pineapple slices.
    It's delicious. Enjoy this dessert within 24 hours after preparing it.
