    Roquefort Tart

    Servings: 8
    Preparation and cooking time: 40 minutes

    Ingredients:

  • 1 puff pastry sheet (or short crust pastry as an alternative)
  • 450 grams cherry tomatoes (about 1lb.)
  • 3 eggs
  • 20 centiliters fresh heavy cream (3/4 cup)
  • 250 grams of Roquefort cheese (1/2 lb.)
  • One Tablespoon Herbs of Provence
  • Salt and Pepper


  • Directions:

    Preheat oven to 220 degrees Celsius. (400 degrees Fahrenheit).
    Spread puff pastry in a buttered tart dish.
    Cook pastry without ingredients for 10 minutes in a 400 degrees F oven.
    While pastry is cooking: beat eggs, add crumbled Roquefort cheese, herbs, salt and pepper.
    Cut tomatoes into slices and spread on cooked pastry.
    Pour the egg and cheese mixture onto the tomatoes.
    Cook for 30 minutes in the 400 degree oven.
    Serve with a green salad and vinaigrette dressing.
