    “Piperade” Tart (Basque Vegetable Tart)

    Servings: 8
    Preparation and cooking time: 55 minutes

    Ingredients:

  • 1 puff pastry sheet (or regular short crust pastry as an alternative)
  • 2 peppers, 1 in each color (red and green)
  • 2 onions
  • 3 Tablespoons of olive oil
  • 3 stem tomatoes
  • 2 zucchinis
  • 3 eggs
  • 125 grs (1/4 lb.) crumbled goat or lamb cheese
  • 1 teaspoon chili pepper
  • 200 grs (1/3lb.) Prosciutto (Bayonne ham) cut into small pieces
  • chives or parsley
  • salt and pepper to taste


  • Directions:

    Heat oven to 400 degrees Fahrenheit.
    Cut the onions and peppers into small cubes and brown them in the olive oil.
    Cook for 10 minutes.
    Cut tomatoes and zucchini into slices and add to the mixture.
    Cook another 15 minutes and remove from heat to cool.
    Beat the eggs as for an omelet and add the crumbled cheese, the chili powder, the ham, salt, pepper, chives or parsley.
    Add to the vegetables and mix all together.
    Spread out the pastry sheet onto a buttered dish.
    Pour the vegetable, ham and cheese mixture into the dish.
    Cook for 30 minutes in a 380 degrees F (200 C) preheated oven.
    Serve with a salad and vinaigrette (salad dressing).
