    Gratin of Red Fruits with Zabaglione

    Servings: 6
    Preparation and cooking time: 20 minutes

    Ingredients:

  • 1 lb (450 g) red fruit (strawberries, raspberries, blackberries, cherries)
  • 4 egg yolks
  • 1/3 cup (3 oz) granulated sugar
  • 3 oz sweet white wine such Marsala
  • 3 oz whipped cream (optional)
  • 2 tsp cornstarch or arrowroot
  • Directions:

    Cut the fruit and place them equally into 4 small bowls.

    In a double boiler (over simmering warm water over low heat) mix the sugar and 4 eggs yolks for 2 minutes with a whisk.

    Warmed up the wine a little. Keep on beating the mixture with an electric mixer for 8 to 10 minutes and slowly pour the wine and cornstarch into the mixture until it becomes thick and frothy and hold its shape (it should almost triple in volume).

    Put aside.

    (Optional): Meanwhile, beat the cream with the electric mixer for approximately 3 minutes. Fold carefully the whipped cream into the zabaglione.

    Pour the mixture on top of the fruit.

    Place the bowls in the oven and grill for 1 to 2 minutes maximum depending on the oven (check constantly) until obtaining a nice golden colour on top.
