    French Flan

    Ingredients

    For the crust:
  • Flour (1 cup or 150 grs)
  • Melted butter (3 oz or 80 grs)
  • Water (1/4 cup)
  • A pinch of salt (1/8 teaspoon)


  • For the flan filling:
  • Sugar (1/3 cup or 80 grs)
  • Eggs (3)
  • Flour (1/2 cup or 80 grs)
  • Vanilla extract (1teaspoon)
  • Pinch of salt
  • Milk (2 cups or 1/2 liter)
  • Directions

    Preheat oven to 380 degrees.

    For the crust:
    Mix flour, salt and melted butter in a large bowl.
    Add the water and form into a ball.
    Roll the dough onto a floured table to avoid the dough from sticking to the table.
    You should obtain a thin crust (1/4”) and place it into a greased cake pan.
    Use a fork to make small holes into the crust to prevent it from swelling when baking. Do not cook it until you put in the filling.

    For the flan filling:
    Mix sugar, salt and eggs with a fork in a bowl for 2-3 minutes.
    Add flour to the mixture slowly, without stopping mixing.
    Then add the milk and the vanilla.
    Pour the mix into the crust and immediately bake the flan for 45 minutes.
    Remove from the cake pan as soon it is cooked.
    Let cool and serve cold.
