    Grandma's French Flan

    Baking time: 40 minutes

    Ingredients
  • 3 eggs
  • 1/3 cup (3 oz) sugar
  • 2 cups (16 fl.oz) milk
  • 1 teaspoon extract vanilla
  • 1/4 cup (2 oz) caramel sugar
  • 2 tablespoons water
  • Directions:

    Heat oven to 350° F.
    In a saucepan, mix sugar and water. Heat the saucepan over high heat until a brown caramel is obtained.
    Pour quickly into a soufflé dish (10-inch) and allow caramel to cover bottom and walls by rotating the dish.
    Use an oven mitt to protect your hand - caramel is hot!
    In a bowl, beat eggs until you get a lemon color. Add sugar, milk and vanilla, and stir.
    Pour the mixture into the caramelized dish. Place the dish in a big rectangular pan on the oven rack.
    Pour boiling water into the rectangular pan (not into the caramelized dish!) to a depth of 1 inch.
    Bake 40 minutes at 350° F.
    Remove from oven and allow to cool, then put into the refrigerator. Unmold before serving.
