    Fine Brittany Cookies

    Servings: about 20 cookies
    Preparation and cooking time: 25 minutes

    Ingredients:

  • 2 cups flour
  • 2/3 cup sugar
  • 1 teaspoon of baking powder (or half an envelope)
  • 8 Tbs melted and cooled butter (4 oz.)
  • 1 large whole egg and 3 large eggs' yolk
  • 1 Tbs extract of vanilla
  • 1 pinch of salt
  • Directions:

    Preheat the oven to 350 degrees F - 180 degrees Celsius or Therm 6.

    In the kitchen Aid mixer with the flat beater in place, on medium speed, mix flour, sugar, salt and baking powder.

    Melt butter in microwave or double boiler and let cool.

    Add the whole egg, the 2 eggs' yolk, the cooled melted butter and vanilla extract to the flour mixture . Mix until well combined and getting a smooth shining dough.

    Roll out the dough on a floured board about the thickness of a thin pizza dough.

    Using a glass, cut out round pieces of dough and place them on a cookie sheet covered with parchment paper.

    Place each round cookie at about 1 inch from each other.

    Dilute the last egg's yolk with a teaspoon of water and brush the top of the cookies. You can also make crisscrossed design with the tip of a fork.

    Bake for approximately 10 to 15 minutes (depending on the cookies' thickness). The top of the cookies should just be golden. Remove from the cookie sheet when baked and let cool on wire rack.

    Serve when completely cold.
