    Chocolate Fondant

    Servings: 6
Preparation and cooking time: 30 minutes

    Ingredients:

  • 9 oz (250 g) dark chocolate
  • 6 squares of orange flavored chocolate
  • 5 large eggs
  • 3/4 cup (170 g) sugar
  • 2.5 oz (75g) butter
  • 2 Tablespoons flour
  • Directions:

Preheat oven to 400 degrees Fahrenheit (210 degrees Celsius).

Break the dark chocolate into small pieces and place in a saucepan. Add the butter and melt using a double boiler, stirring frequently until the chocolate is smooth. Put aside for 10 minutes to cool.

Mix the eggs and sugar in a large mixing bowl for a few minutes. Add flour and stir it until all lumps are gone.

Add the melted chocolate to the mixture in the large bowl. Stir well.

Pour the mixture into 1/2 cup, small buttered custard bowls (ramekins). Only fill half way. Add one orange chocolate square (or mint chocolate if you prefer), then continue filling the bowls with the remainder of the chocolate mixture.

Place the bowls in the oven for exactly 12 minutes.

Serve in the next 10 minutes following their removal from the oven.

As an option, you may prepare the "crème des Princes". The recipe may be found at www.francemonthly.com/n/0300/recipe.php. Serve the cream sauce next to the chocolate fondant.

    Bon appétit !
