    Chocolate Profiteroles

    Servings: 6
    Preparation and cooking time: 90 minutes

    Ingredients for 24 puffs:

  • 1cup of water.
  • 4 ounces of butter
  • 3/4 cup of flour
  • 2 Tablespoons of sugar
  • 2 pinches of salt
  • 1/2 teaspoon of baking powder
  • 3 eggs
  • 11 ounces of chocolate
  • 4 cups of vanilla ice cream


  • Directions:

    Put the water, butter and salt in a saucepan on medium heat and bring to a boil.
    Mix the baking powder with the flour. Pour the mixture all at once into the boiling water.
    Stir vigorously with a wooden spoon to form a compact dough that does not stick to the pan’s sides. Cool for 10 minutes.
    Preheat oven to 375 degrees Fahrenheit.
    Add the sugar and the eggs, one by one, to the dough and mix well after each addition.
    With a teaspoon, form a ball with the dough and place on a greased cookie sheet (or you may use parchemin paper to cover the cookie sheet). You should obtain about 24 puff dough balls.
    Add a pinch of sugar onto each ball before placing in the heated oven for 25 minutes.
    A few minutes before serving put the chocolate, broken into pieces, into a bowl with 1/2 cup of water. Place in the microwave for 1 1/2 minutes, and stir to obtain a chocolate sauce.
    When the puffs have cooled and just before serving, carefully open each puff and place a scoop of vanilla ice cream. Place puffs on plates and pour the hot chocolate sauce on them.
    You may also add whipped cream if desired.
    Serve immediately
