    Light Lemon Cake

    Preparation and cooking time: 55 minutes

    Ingredients:

  • 1 organic lemon (untreated)
  • 1/2 cup sugar
  • 1 cup flour sifted with 1 teaspoon of baking powder
  • 4 tablespoons melted and cooled butter
  • 2 eggs
  • 1/2 cup whole milk
  • Directions:

    Preheat the oven to 350 degrees F - 180 degrees Celsius or Therm 6.

    Stir the melted but cooled butter and the sugar in a bowl for two minutes.

    Grate the lemon zest.

    Add the eggs, the grated lemon zest and stir until well combined and smooth.

    Add progressively the flour sifted with the baking powder while stirring.

    keep on stirring while pouring the milk and then the juice of half a lemon.

    Pour the mixture into a rectangular 10" x 5" buttered cake pan.

    Bake in preheated oven for 45 minutes at 350° Fahrenheit.

    Let cool before turning out.
