    Salade Niçoise

    Preparation time: 50 minutes

    Ingredients
  • 2 Eggs
  • 0.5 lb. Green Beans
  • 2 Tomatoes and 1/2 Cucumber
  • 2 Potatoes and 1 Onion
  • 1 Can of Tuna (6.5 oz)
  • 1 Small Can of Anchovies (8 fillets/2 oz)
  • 10 Black Olives
  • 3 Spoons of Olive Oil
  • 1/4 Teaspoon of Salt and Pepper
  • Directions:

    Heat salted water in a saucepan and add potatoes when water is boiling and boil for 40 minutes.
    Heat salted water in a saucepan, add green beans when water is boiling and boil for 20 minutes too.
    Heat salted water in a saucepan, add eggs when water is boiling and boil them for 10 minutes.
    Meanwhile, drain tuna and anchovies.
    Wash tomatoes and peel cucumber and onion.
    Once eggs and potatoes are cooked, peel them.
    Slice cucumber, onion, tomatoes, eggs and potatoes.
    In large bowl, mix all ingredients including olive oil, salt and pepper and toss (you can use vinaigrette too). Refrigerate for a couple of hours before serving.

    It is very easy to prepare and so good in Summer!
